Paleo CrockPot Stir Fry

I'm just going to get right to it because I need to go run before picking Caden up from school so here we go!


Ingredients:

1.2 lbs flank steak
3/4 cup coconut aminos
2 garlic cloves crushed
1 tsp ginger (I use ground but you can do fresh)
1 tsp sesame oil
4 bell peppers cut into bite-size pieces (I do 2 red & 2 green)
1 small sweet onion cut into bite-size pieces
2 tbsp arrowroot starch
Sesame seeds
green onions


Directions:

1.Place flank steak into crock pot
2. Pour coconut aminos, garlic, ginger, and sesame oil over steak. (if youre feeling extra blend those ingredients first before pouring onto steak)
3. Turn crock pot on low and cook for 5-6 hours.
4. During last hour of cooking add bell peppers and onion. Continue cooking on low.
5. Once beef & veggies are done, add arrowroot to crock pot and stir around.
6. Top with green onions & sesame seeds!

Serve on your favorite type of rice! We love cauliflower rice, sweet potato rice, and my husband likes plain ole rice rice. Compromise.


PS* I found stir fry flank steak at HEB that is already cut into stir fry-like pieces, but if you cant find something like that just throw the whole thing in the crock pot if you don't feel like cutting it up yourself. It'll still taste the same.
